Pretty much EVERY time I make handmade chocolates, I have a little left over Belgian couverture chocolate. It's expensive stuff. Sure - I can scrape on to a sheet, harden it up and use again next time or even (ssshhhh - eat it)... but you know what ? There are far better things you can use it for.
I always wanted to be able to make my own flavours of chocolate nibs / drops / chips... whatever you want to call them. Those ones you buy from the store that are machine made look so cute with their little flick over tips on the top, but generally taste pretty nasty. Hand piping them is tedious and gives me carpal tunnel. That hurts. it's not worth the agro.. so instead, I designed a new mould that makes dozens of them at speed
Simply take your couverture chocolate and add in finely ground coffee, freeze dried raspberries, orange oil extract... ground cookies... there are so so many things you can try as flavour and texture combinations.
These are addictive as a snack, delightful scattered as a topping on ice cream , mighty handy as cake / cookie inclusions.
Make your own dairy free versions with raw cacao or try cocoa butter mixed together with peanut butter
They'd look cute tossed on top (or as inclusions) or in hand made soaps too !
These size up the same as UK commercial chocolate chips / drops and are pretty tiny - 9mm dia across the base and taper to the top sort of like little nibbed pyramids.
Just dump the melted chocolate on top of the mould and then skim over with a bench scraper to fill the holes. Takes just a few seconds.
Overall mould size is 200mm x 250mm x 8mm
Makes (I think) 221 chocolate drops in one hit... if you fill all the cells
